Creative Uses for Leftovers


Don't want to spend the money to eat out, but don't have the time or energy to create a completely-from-scratch meal? With care and creativity, leftovers just might be the solution to your mealtime dilemma.

Repurpose
One of the biggest complaints against leftovers is boredom. Who wants to eat the exact same meal three nights in a row? Combat this by using leftover food in different dishes. Pull the meat off of yesterday's roasted chicken, combine with cheese, tortillas and salsa, and you have quesadillas. Put fruit from yesterday's breakfast into a blender, and you have a smoothie.

Scale Down
Leftovers from a big dinner can be used to make a smaller lunch. Try combining spare veggies with eggs for a healthy omelet. Roast beef, turkey or chicken make delicious sandwiches. Add meat and vegetables to your favorite broth to make soup.

Be Safe
Food safety gets a little trickier when dealing with leftovers. Any food you want to save should be covered and refrigerated no more than 2 hours after the meal. (If you intend to keep it for more than 3 days, freeze it.) Keep track of what's stored when and never eat food that looks or smells strange.
